Growing up, I have many memories of going to our local mall and getting those wonderful “homemade-ish” pretzel bites.
You know what I’m talking about!

Those soft, chewy, and warm pretzels covered in usually way too much kosher salt, so that before taking the first bite you would brush off some of the salt, and then drench the pretzel in that overly chemicalized fake, “nacho cheese”.
Mmmm!
Those are fond, fond memories my dear friends!
But now, knowing what I know about food, I have a hard time fully enjoying those pretzels anymore, although they still taste delicious.
So what does one do when they want homemade, soft pretzel bites at home?
You get a recipe and make them homemade, of course!

After browsing through many recipes, most of them call for yeast, AND you have to mix the yeast in water, AND you have to wait for the dough to rise for hours AND yada, yada, yada…
But nope, not this homemade pretzel recipe!
This recipe is so easy, seriously anyone can make these pretzel bites!
These pretzel bites are made without yeast and these pretzel bites can even be made without a kitchen-aid mixer!
So, are you ready to make the easiest, homemade, soft pretzel bites ever?!
With only a few simple steps to making your very own homemade pretzel bites right at home with success!

1. Make homemade self-rising flour. (I promise, it’s super easy and simple!)

*Before you begin, preheat your oven to 425 degrees F and line a baking sheet with parchment paper.*
In a mixing bowl, you will add your 1 cup of all-purpose flour, 1 and 1/2 teaspoon baking powder, and 1/4 teaspoon salt to your mixing bowl and then mix together and set aside.
Now congratulations and pat yourself on the back because you just made your very own “homemade self-rising flour!”.
2. Add plain Greek yogurt

To a food processor or mixer with a dough hook, add 1 cup of plain Greek yogurt.
3. Add self-rising flour

To the food processor or Kitchen-aid mixer, add self-rising flour to the Greek yogurt little by little, mixing between each time.
Keep mixing it until well combined and it starts to form a ball (about a minute or so).
4. Knead the dough

Flour your working surface. I used my granite countertop.
Place the pretzel dough on your working surface and sprinkle a little extra flour on the top. Knead it gently a for a bit, adding more flour so that it doesn’t stick to your hands.
5. Slice

Roll the pretzel dough into a ball, and cut the pretzel dough into 4 sections.
6. Roll the pretzel dough

Now take one of your quartered pretzel dough sections and roll it out into a long snake, about an inch thick, and continue with all the pieces of pretzel dough.
This will give you 4 pretzel “snakes”.
6. Cut into pretzel bites

Now it’s time to cut your pretzel dough into little pretzel bites!
Cut the pretzel dough into 2-inch bites.
7. Dip into baking soda/water mixture

Place 1 cup of water in a microwave-safe dish and heat until boiling, about a minute or two. Add 1 tablespoon baking soda to the boiling water and stir until dissolved.
Now take a few pretzel bites and dip them into the baking soda/water mixture and immediately pull them out and place them on a baking sheet with parchment paper.

8. Bake the pretzel bites

In your preheated oven to 425 degrees Fahrenheit, add your baking sheet of homemade pretzel bites.
Bake these little guys for about 7-10 minutes, depending on your oven and until golden brown.

9. Brush with melted butter and add salt

Last but not least, after you pull the pretzel bites out of the oven, brush them with melted butter and then sprinkle them with sea salt or kosher salt to taste.
10. Indulge! No seriously, please do!

There will be no judging if you happen to eat the whole pan, mostly by yourself.
