Healthy Tropical Green Smoothie
How many of you find it hard to eat the recommended daily veggie intake? ( raises hands )
Yeah sometimes its hard, especially with my kids, but I have found one way to get them to consume a decent amount of raw spinach, and it’s in our morning green smoothies. We don’t drink them every morning, but I try to make them quite often. We love to drink them or put smoothies into popsicle molds. The kiddos and I love to eat healthy popsicle’s in the summer time.
In my smoothie recipe you will find no ice as the ” frozen-ness “, but instead I use frozen fruit. I have noticed that using ice in smoothies tends to water them down if you’re not a fast enough drinker.. like myself. While we’re on that note, you must know that I am also not a fast eater, which is actually quite funny when we go out to eat because I am usually the last person still eating. So, I get my food to go and then finish it in the car on the way home…almost.every.time! OR I am the last one at the dinner table, sitting all by my lonesome self, while the rest of the family has retired to doing more grander affairs such as napping or playing with legos. There at the table, will be myself, still chewing on chicken. Needless to say, putting ice in MY smoothies would equal a melted watery mess. And that is no bueno my friends!
I have a cool trick that gets all of your greens blended up nicely into the smoothie so that you’re not chomping on salad bits in the midst of drinking. The coconut oil in the smoothie adds a nice touch of coconut flavor, but also gives you a good dose of healthy fats to start your day off right.
